How does an order become "processed"?

Typically orders become processed manually via your end if you run an independent supplier. Once a purchase is made it is up to you/your distributor to dispatch the purchase to the customer. Once you’ve done everything necessary to provide your customer with what they have purchased you can mark it as “Processed”.
